SALAD INGREDIENTS

2 cups cooked corn

1 pint cherry tomatoes, cut in half

1 diced avocado
-
1/2 cup red onion, diced
-
1/4 cup cilantro, chopped
DRESSING INGREDIENTS
-
2 tbsp extra virgin olive oil
-
1 tbsp fresh lime juice
-
1/2 tsp lime zest
-
1/4 tsp salt
-
1/8 tsp freshly ground black pepper
Corn, Avocado and Tomato Salad
Serving: 6
This salad uses many seasonal veggies, some of which you may have in your own garden. Serve as-is with a fork, or scoop some up on a tortilla chip. This will be the hit of the BBQ!
DIRECTIONS
1. Add dry ingredients into large bowl and mix
2. Whisk the wet ingredients together
3. stir the dressing into the salad and serve

Optional add-ins: Black beans, bell peppers, jalapenos, cucumbers, what else do you have in your garden?
