Dense Bean Salad

Ingredients:
Finely diced celery (1/2 stalk)
Finely diced cucumbers (1 English cucumber)
Finely diced tomatoes (~10 cherry tomatoes)
Finely diced red onion (1/2 onion)
Finely chopped Pepperoncini (~5)
Finely chopped Kalamata olives (~10)
1/2 lemon juice
1 can of garbanzo beans (low sodium, rinsed and dried)
1 can of can of cannellini beans (low sodium, rinsed and dried)
Dressing Ingredients:
1 part White Balsamic Vinegar to 2 parts EVOO
Basil, Parsley to taste
1/2 lemon juice
Can add olive juice to taste
Directions:
In a large bowl, add vegetables
Once beans are thoroughly rinsed and dried, add to bowl
Squeeze the juice of half a lemon over ingredients in large bowl
Prepare dressing by combining ingredients into a jar or separate bowl
Once dressing is mixed, can either store dressing or drizzle on top of salad
Mix ingredients with dressing
Ready to serve or store in the fridge for the week!
