Tuna Salad


Ingredients:

  • 1 can of albacore tuna in water

  • Approximately ½ cup of cottage cheese

  • ¼ English cucumber, cut in quarters

  • 1-2 sticks of celery, cut in small pieces

  • ¼ cup of diced red onion, or per taste

  • Approximately 5 dill pickle chips, or equivalent

  • Dill, to taste

  • Juice of half of a lemon


Directions:


  1. In a blender or food processor, puree cottage cheese

  2. Drain tuna and place in bowl

  3. Pat pickles dry and add vegetables in bowl

  4. Scoop in cottage cheese until reach desired consistency

  5. Add in lemon juice and mix together


Enjoy as a sandwich, wrap, as a dip, or by itself!
