Healthy Holiday Rigatoni



Ingredients:

  • Fennel, sliced

  • Shallots, sliced

  • Leeks, sliced

  • Cherry tomatoes, halved

  • Minced garlic

  • Spinach

  • Pinot Grigio (optional)

  • Hot Italian sausage, lean

  • Rigatoni

  • Ricotta, low fat/skim


Directions:

  1. Boil pasta water, cook pasta

  2. Over medium heat, add olive oil and cook sausage

  3. Once fully cooked, remove from pan

  4. To the pan that the sausage was cooked in, add leeks, shallots, and fennel — then add olive oil and minced garlic until produce is tender

  5. Add in a 0.5-1 cup of Pinot Grigio or pasta water and let simmer

  6. Add sausage back to pan, mix well

  7. Add in spinach until cooked

  8. Add pasta to pan, mix

  9. Add in herbs or spices as desired

  10. When serving, add a scoop of ricotta and mix
