Time for Change Crispy Fall Salad

INGREDIENTS:

  • 1 kohlrabi, cut into matchsticks

  • 2 medium apples (any variety), Fuji and Honeycrisp work great, cut into matchsticks

  • 2 medium carrots, cut into matchsticks (or purchase ready-cut carrot matchsticks/shredded carrots)

  • 2 Tbsp chopped walnuts

  • ¼ cup fresh tarragon leaves 

  • 1 tsp lemon zest (zest of half a lemon) 

  • 1.5 Tbsp olive oil

  • 1 Tbsp lemon juice 

  • Sea salt and ground black pepper to taste 

  • ¼ cup grated Monterrey jack or gouda cheese (optional)



DIRECTIONS:

  1. In a large serving bowl, combine the kohlrabi, carrot and apple matchsticks.

  2. Add the cheese, if using, and the tarragon leaves and chopped walnuts.

  3. Shave lemon zest over the bowl.

  4. Drizzle in olive oil and lemon juice.

  5. Sprinkle salt and black pepper. 

  6. Gently toss the salad and serve

  7. Add a protein like baked chicken, salmon, grilled shrimp or tofu as desired
