Watermelon Feta Salad



Ingredients:

  • ¼ watermelon, cubed

  • 1 cucumber, sliced in half moons

  • 1 can of chickpeas, rinsed and dried

  • 1.5-2 ounces of feta cheese, crumbled

  • mint, minced (amount to taste)

  • balsamic glaze to drizzle

  • optional: top with walnuts



Directions:

  1. Add ingredients in bowl

  2. Mix well

  3. Drizzle balsamic glaze on top and serve!

  4. Option to top with walnuts

  5. To make a complete meal, add a grain (i.e. couscous, quinoa, ferro) and/or a protein (i.e. grilled chicken, low fat cottage cheese)
